Nicolas Julhès introduces me to the subtle world of spirits and micro-distilling. This lover of stills has co-founded the Distillerie de Paris with his brother Sébastien, the first Parisian micro-distillery since they disappeared in the last century.
Here, everything is designed and prepared to be as close as possible to the soul of the project, to create spirits with a strong signature, to find an aesthetic of taste whilst being free from any tradition. To achieve that, they had to redesign the still to respond to the specific issues of the Distillerie de Paris, and the same for Big Belly and its companions, the made to measure ageing barrels. Being curious by nature, Nicolas set about searching for new aromatic spectra and distils by reinterpreting the raw ingredients, maple syrup, agave and even bergamot. Gin, rum, vodka, eau de vie and more, his spirits are surprising, elegant, crystalline, floral or honeyed and have a new surprise in store at every tasting.
