Vincent Luftman, Raphaël Blanc and Tobias Chaix grew up together in the sun-kissed, lively town of Saint-Tropez in the Mediterranean. After spending years immersed in this iconic town’s legendary nightlife, they decided to launch the Indie group! So-named as it’s an abbreviation of “independent”. A project that counteracts the blingy reputation of Saint-Tropez, launched by three local guys who wanted to push the boundaries with a “new approach to dining out”. And it was a roaring success for these three 30-somethings, who after opening Indie Beach on Pampelonne Beach, headed to the winter sports mecca of Megève. A second go-to haunt for their epicurean clientele. Situated in a traditional chalet, the three friends focused on its decor to bring it in line with the Indie group’s recognisable style. With, of course, a winter sports twist! A buzzing place to stop for some warming après-ski fun. To welcome their guests day and night, the co-founders designed a wooden, comforting and festive space with subdued lighting and tartan wallpaper rounded off with kitsch artwork.And once settled down with your friends, you can dig into mountain specialities including a puff-pastry covered mushroom soup and a new take on tartiflette, rustled up by their young celebrity chef, Diego Alary. A comforting gourmet twist on alpine dishes, served by friendly staff and accompanied by tunes from the Indie House Records music label – all you need for a great party! “Cool music” combined with a tasty menu: the trio’s winning recipe for a venue that’s hip, beautiful and serves great food.

We’re all in our 30s and childhood friends. We grew up together as we were all born in and around Saint-Tropez.
  • What’s the story behind Indie, a brand that brings together places and experiences focusing on lifestyle and partying?
Vincent, Raphaël, Tobias

The idea took hold in 2016. All three of us wanted to “change things” in Saint-Tropez because we didn’t relate to the places where we used to hang out. We decided to set up our first restaurant: Indie Beach on Pampelonne Beach. The idea was to shake things up a bit, to create an atypical Saint-Tropez restaurant experience that felt more genuine.

  • Why did you choose this name?

INDIE is obviously an abbreviation of “independent”. When we started out, we felt a bit like revolutionaries! We wanted to go against the tide of everything “typically” Saint-Tropez, which is why we chose this name.

  • What is the common theme between the Indie establishments?
Vincent, Raphaël, Tobias

Every Indie establishment shares the same DNA, and we make sure it’s respected in the best possible way. We like to create welcoming places with a friendly vibe where customers feel at home. The notion of sharing is also very important. This is conveyed by our employees, and they are an integral part of the concept. They’re all young and do everything possible to make sure our customers have a great time.

  • Having opened 4 establishments in Saint-Tropez, you’ve just opened Indie Mountain in Megève. Why did you choose this location for your mountain venue?
Vincent, Raphaël, Tobias

There’s always been a strong connection between the two destinations (Saint-Tropez in summer, Megève in winter). A strong tie that unites these two towns. You’ll find a similar clientele alongside big players from this particular sector. So when the opportunity presented itself, we jumped at the chance!

  • How did you instil “the art of partying mountain-style”? And how do you define this concept?

It was a natural process. We believe that all you need is a good DJ, great music and customers who want to let their hair down. It’s a winning formula!

  • You’ve chosen an Alpine-style chalet as the venue. What are the ideas behind the decor?
Vincent, Raphaël, Tobias

We wanted to recreate the atmosphere of a traditional chalet while adding more decorative elements such as tartan tapestry on the walls, paintings that are a bit kitsch and a large library. Elements that our customers welcome after a busy day on the slopes.

  • What about the ambiance?

The subdued lighting is very important. It’s something that can make all the difference to diners. The lighting is designed to create an intimate atmosphere – something that we wanted from the start!

  • Why did you choose the young chef Diego Alary to create the menu?
Vincent, Raphaël, Tobias

For us, Diego embodies the renewal of the traditional restaurant. He’s not afraid to push the boundaries. He’s young and has plenty of ideas! We met him during his season in Saint-Tropez (To Share – Jean Imbert), and we hit it off immediately. We told him about our Megève project, and he immediately said he wanted to be part of it, which meant a lot to us.

  • What kind of cuisine does he offer in your restaurant?

We worked together and created a “comforting” menu. Generous helpings that people appreciate after expending so much energy enjoying winter sports. Our menu includes a delicious puff-pastry-topped morel mushroom soup and our take on tartiflette, which is a real bestseller! We wanted a gastronomic menu, and he responded brilliantly.

  • In addition to your restaurant, what other places in the area would you recommend?
Tobias
I recommend Kinugawa; if you want to swap traditional dishes for a lighter menu, and tuck into excellent fish dishes then this is the place to go. And of course, to get the evening off to a great start, go to our friend Trompette’s lovely wine bar, Atelier.
  • Where will we find you in the coming months?

In Saint-Tropez of course! We’re getting ready for a busy season: a new establishment, as well as numerous events and new ideas for the current ones.
